Method
Calijo is our very own answer to French Calvados. This 40% alc./vol. apple brandy is a blend of different apple ciders (Cortland, Lobo and Empire) distilled in our German-made still. It then matures 3 years in new 200 litres oak barrels.
Tasting notes
The long aging imparts to this fine and unique spirit with a copper tinge and aromas of wood, vanilla and burnt caramel. The palate is mellow and finish with a soft, lingering, apple aftertaste finish.
Serving suggestion
The Calijo is our very own answer to French Calvados. Made in the first apple microdistillery in Canada, this incomparable apple brandy should be served as a digestif (straight or on the rocks), a Trou normand or to flambé.
